Chocolate covered pecans – No Sugar!

I have a HUGE sweet tooth and tend to get big sugar cravings after lunch and dinner. This little snack helps to satisfy my craving for something sweet and has a deep chocolate flavor. The carob powder adds a bit of sweetness without adding sugar. Enjoy!


*These should be kept in the freezer until ready to eat! Because they’re made with coconut oil, they melt pretty quickly


1/4 cup coconut oil 2 T peanut butter or other nut butter 2 T unsweetened cocoa powder 2 T unsweetened carob powder 1/4 t vanilla extract Pinch of sea salt 2 cups whole pecans (give or take depending on how much chocolate covers the pecans. Other nuts or seeds (walnuts, almonds) would be great with this too.)


Melt all ingredients together except the pecans in a double boiler or in a saucepan over low heat. Stirring constantly until smooth and melted.


Place mixture in the refrigerator for approximately 5-10 minutes until slightly cooled.


Pour over pecans and stir to evenly coat.


Place on wax paper on a jelly roll pan and freeze for at least an hour.


Store in the freezer for up to several weeks and enjoy frozen or at room temp!
